Ingredients:
10%Fruit
g Formula: KetoCal 4:1 LQ (measure in mL) Nutricia
g Bouillon, Wylers Instant-Beef/Chick granules
g Water
g Oil, Olive
g Tomato paste - canned
g Peppers, green - raw
g Avocado, Florida
g Onions - raw
g Cilantro - fresh, raw
g Chili Powder
g Seeds, Cumin
g Paprika (spice)
Directions:
- Heat olive oil in a pan on low
- Add green peppers and onions to oil and sauté until slightly tender (about 5-10 minutes)
- Add bouillon (dissolved in the 1 tbsp water) and KetoCal LQ, blend together
- Add tomato paste, stir well
- Add spices 0.5 g each of chili powder, cumin, paprika, and oregano (Note- This may be spicy for little ones so consider adding less and adjusting to taste)
- Stir well over low heat until ingredients are well blended (do not overheat on higher temperatures or cook too long, this alters the texture)
- Pour soup into a bowl, top with diced avocado and chopped cilantro
