Pretzels made with Liquigen (2:1)

Description: These pretzels are keto-versions of a classic comfort snack! You won't believe these are low-carb! Serve with Chef Rachel's KetoCal Cheese Sauce! These pretzels are made on a mini doughnut maker. You could also use a cakepop maker for pretzel bites!

Ingredients:
 g Flour, Coconut - Bob's Red Mill Organic Hi Fiber
 g Almond flour/meal, Bob's red mill
 g Egg (raw, mixed well)
 g Cheese, Mozzarella, Whole Milk
 g Oil emulsion - Liquigen (MCT) - Nutricia

Directions:

  1. Weigh all ingredients on gram scale (except for salt) 
  2. Mix all ingredients together and allow to absorb for a few minutes 
  3. Heat mini doughnut maker (you could also use cake pop maker for pretzel bites)
  4. Drop batter in small pieces in maker and sprinkle with a pinch of salt (course salt or pretzel salt)
  5. Cook for 3-5 minutes. 
  6. Remove carefully and allow to cool before serving
  7. Serve with Chef Rachel's KetoCal Cheese Sauce (search for recipe in MyKetoPlanner.com)
