KetoCal® Almond Coconut Cookies (3:1)

Description: This recipe is for patientsfollowing a 3:1 ketogenic diet. The ketogenic diet should only be used underclose medical supervision. Always check with your health care professional toensure that a recipe is appropriate.

Ingredients:
 g Flour, Coconut - Bob's Red Mill Organic Hi Fiber
 g Egg (raw, mixed well)
 g Formula: KetoCal powder 3:1 Nutricia NA
 g Almond Flour (whole ground blanched almonds)
 g Butter

Directions:

  1. Preheat oven to 325°F 
  2. Melt butter then add to egg.
  3. Add in 5 - 10 drops of almond extract to egg mixture.
  4. Add optional sweetener and almond extract.
  5. Mix together the dry ingredients; coconut flour, KetoCal® powder and almond flour.
  6. Stir egg mixture into dry ingredients until well blended.
  7. Allow dough to sit for a few minutes then form into 6 small balls on cookie sheet. You may press down to create a flat cookie.
  8. Bake at 325°F on center rack of oven for 8 – 10 minutes.
