KetoCal® Almond Coconut Cookies (4:1)

Description: This recipe is for patients following a 4:1 ketogenicdiet. The ketogenic diet should only be used under close medical supervision.Always check with your health care professional to ensure that a recipe isappropriate.

Ingredients:
 g Formula: KetoCal 4:1 powder - Nutricia
 g Butter
 g Flour, Coconut - Bob's Red Mill Organic Hi Fiber
  Egg (raw, mixed well)
  Almond Flour (whole ground blanched almonds)
 g Truvia Natural Sweetener - 1 packet weighs 3.5gm

Directions:

  1.  Melt butter then add to egg.
  2.  Mix together the dry ingredients; coconut flour, KetoCal® powder and almond flour.
  3.  Stir egg mixture into dry ingredients until well blended.
  4.  Optional: add a small amount of carbohydrate-free almond extract and/or artificial sweetener, to taste
  5.  Allow dough to sit for a few minutes then form into 6 small balls on cookie sheet. You may press down to create a flat cookie.
  6.  Sprinkle Truvia* on top of cookies
  7.  Bake at 325°F on center rack of oven for 8 – 10 minutes
